Sweet Potato Casserole

The recipe calls for canned sweet potatoes, but I often use fresh! I cook them in the microwave to save time. 

ingredients
3 cups (1 tall can) sweet potatoes drained & mashed
1 cup sugar (I scale this WAY back to about 1/3 cup)
2 eggs
1 teaspoon vanilla extract
1 stick butter, melted

Combine the above ingredients together with mixer until well blended, adding the melted butter last. Spread the mixture in the bottom of a 13x9-inch baking pan.

Topping
1 cup brown sugar
1 cup pecans (halves or pieces)
1/2 cup flour (gluten free flour if needed!)
1/3 cup butter (softened or slightly melted)

Combine the above ingredients together & mix with fork until well blended. Spread on top of sweet potato mixture. 

Place in a pre-heated oven at 350 degrees for 30 minutes or until topping is crunchy looking.
